Ingredients

(Makes about 8 medium pancakes)

  • 1 cup plain yogurt Greek or regular
  • 1 large egg
  • 1 tablespoon sugar optional for a sweeter pancake
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 –4 tablespoons milk if needed to adjust the batter consistency
  • Butter or oil for cooking

Optional Toppings:

  • Fresh fruit berries, banana slices, etc.
  • Maple syrup or honey
  • Whipped cream
  • Chopped nuts or chocolate chips

Instructions

Prepare the Batter

  • In a large mixing bowl, whisk together the yogurt, egg, sugar (if using), and vanilla extract until smooth and well combined.
  • In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; the batter should be thick but smooth.
  • If the batter is too thick, add 1–2 tablespoons of milk at a time until it reaches your desired consistency.

Heat the Pan

  • Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or a small amount of oil.
  • To test if the pan is hot enough, sprinkle a few drops of water on the surface. If they sizzle, it’s ready!

Cook the Pancakes

  • Pour about ¼ cup of batter onto the skillet for each pancake. Use the back of a spoon to spread the batter slightly if needed.
  • Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set.
  • Flip the pancake carefully and cook for another 1–2 minutes, or until golden brown.
  • Repeat with the remaining batter, greasing the pan as needed.

Serve and Enjoy

  • Stack the warm pancakes on a plate and add your favorite toppings. Whether you go for fresh fruit, syrup, or a dollop of yogurt, these pancakes will be a hit!

Notes

Tips for Perfect Pancakes

  • Don’t Overmix: Overmixing can make the pancakes dense. Mix just until the ingredients are combined.
  • Low and Slow: If your pancakes brown too quickly, lower the heat to ensure they cook evenly.
  • Experiment: Add chocolate chips, blueberries, or a pinch of cinnamon to the batter for fun variations.
Enjoy these fluffy yogurt pancakes as the ultimate comfort breakfast!
