Ingredients
  

  • 1 cup 250g creamy peanut butter (natural or processed)
  • ½ cup 115g unsalted butter, softened
  • ¾ cup 150g granulated sugar
  • ½ cup 100g light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups 190g all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Instructions
 

Preheat the Oven

  • Preheat your oven to 175°C (350°F).
  • Line two baking sheets with parchment paper or silicone baking mats.

  • Scoop 1–1.5 tablespoons of dough and roll it into a ball.
  • (Optional) Roll the dough ball in granulated sugar for a slightly crunchy exterior.
  • Place the balls onto the prepared baking sheets, spacing them about 2 inches apart.

Create the Iconic Crisscross Pattern

  • Using the back of a fork, gently press down on each dough ball to flatten slightly, creating a crisscross pattern.

Bake the Cookies

  • Bake for 10–12 minutes, or until the edges are set and the tops look slightly underbaked (they will continue to cook as they cool).

Cool and Enjoy

  • Remove the baking sheets from the oven and let the cookies cool on the sheet for 5 minutes.
  • Transfer them to a wire rack to cool completely.
