Yogurt Pancake
Yogurt pancakes are a delightful twist on the classic breakfast favorite.
Ingredients
(Makes about 8 medium pancakes)
- 1 cup plain yogurt Greek or regular
- 1 large egg
- 1 tablespoon sugar optional for a sweeter pancake
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 –4 tablespoons milk if needed to adjust the batter consistency
- Butter or oil for cooking
Optional Toppings:
- Fresh fruit berries, banana slices, etc.
- Maple syrup or honey
- Whipped cream
- Chopped nuts or chocolate chips
Instructions
Prepare the Batter
- In a large mixing bowl, whisk together the yogurt, egg, sugar (if using), and vanilla extract until smooth and well combined.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; the batter should be thick but smooth.
- If the batter is too thick, add 1–2 tablespoons of milk at a time until it reaches your desired consistency.
Heat the Pan
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or a small amount of oil.
- To test if the pan is hot enough, sprinkle a few drops of water on the surface. If they sizzle, it’s ready!
Cook the Pancakes
- Pour about ¼ cup of batter onto the skillet for each pancake. Use the back of a spoon to spread the batter slightly if needed.
- Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set.
- Flip the pancake carefully and cook for another 1–2 minutes, or until golden brown.
- Repeat with the remaining batter, greasing the pan as needed.
Serve and Enjoy
- Stack the warm pancakes on a plate and add your favorite toppings. Whether you go for fresh fruit, syrup, or a dollop of yogurt, these pancakes will be a hit!
Notes
Tips for Perfect Pancakes
- Don’t Overmix: Overmixing can make the pancakes dense. Mix just until the ingredients are combined.
- Low and Slow: If your pancakes brown too quickly, lower the heat to ensure they cook evenly.
- Experiment: Add chocolate chips, blueberries, or a pinch of cinnamon to the batter for fun variations.
